You only need one bowl!

Ingredients

  • ⅓ cup melted coconut oil or extra-virgin olive oil or high quality vegetable oil
  • ½ cup honey or maple syrup
  • 2 eggs
  • 1 cup mashed ripe bananas (about 2 large bananas)
  • ¼ cup milk of choice or water
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 ¾ cups white whole wheat flour or regular whole wheat flour
  • Optional: ½ cup of mix-ins. Chopped nuts, chocolate chips, raisins, chopped dried fruit, fresh banana slices.

Instructions

  1. Preheat oven to 165 degrees and grease a loaf pan
  2. In a large bowl, mix all the wet ingredients together. (oil, honey, eggs, vanilla extract, milk)
  3. Stir in mash banana
  4. Add in your dry ingredients (baking soda, salt and cinnamon) and stir until until combined. Some lumps are totally okay.
  5. Add in your extra nuts or dried fruit.
  6. Pour the batter into your greased loaf pan. You can also sprinkle the top with a little extra cinnamon, sugar, nuts, oats or banana slices.
  7. Bake for 55 to 60 minutes. You'll know when its done when a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for at least 10 minutes. Loosen the edges by running a knife around the edges before transfering it onto a wire rack to cool completely.

Tips

If using coconut oil and it solidifies against the cold eggs just leave it in a warm spot for 10 minutes.
