You only need one bowl!
Ingredients
- ⅓ cup melted coconut oil or extra-virgin olive oil or high quality vegetable oil
- ½ cup honey or maple syrup
- 2 eggs
- 1 cup mashed ripe bananas (about 2 large bananas)
- ¼ cup milk of choice or water
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- 1 ¾ cups white whole wheat flour or regular whole wheat flour
- Optional: ½ cup of mix-ins. Chopped nuts, chocolate chips, raisins, chopped dried fruit, fresh banana slices.
Instructions
- Preheat oven to 165 degrees and grease a loaf pan
- In a large bowl, mix all the wet ingredients together. (oil, honey, eggs, vanilla extract, milk)
- Stir in mash banana
- Add in your dry ingredients (baking soda, salt and cinnamon) and stir until until combined. Some lumps are totally okay.
- Add in your extra nuts or dried fruit.
- Pour the batter into your greased loaf pan. You can also sprinkle the top with a little extra cinnamon, sugar, nuts, oats or banana slices.
- Bake for 55 to 60 minutes. You'll know when its done when a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for at least 10 minutes. Loosen the edges by running a knife around the edges before transfering it onto a wire rack to cool completely.
Tips
If using coconut oil and it solidifies against the cold eggs just leave it in a warm spot for 10 minutes.
